Try the Apex group of hotels, there are 4 in Edinburgh, 2 in the Grassmarket, 1 at Haymarket, and 1 at Waterloo Place near the end of Princes Street. They all get good reviews in Tripadvisor and they do reasonably priced short breaks. See link for prices and information.
